Dehydrated Green Peppercorns

Dehydrated Green Pepper is a premium quality pepper, processed out of farm fresh green pepper berries into dried form, by air drying, retaining its green colour and giving out the best flavour. This is superior in quality, flavour, and colour than Black Pepper.

Freshly harvested green peppercorns are collected directly from different small farmers and brought to our factory. The processing of the peppercorns should take place within 24 hours of harvesting.

The peppercorns are first sieved in sieving machine with 5 mm mesh to separate smaller pin heads and dust particles. The peppercorns are then passed through a de-stoning machine to remove stones and other heavier impurities present. The peppercorns are then washed thoroughly in running water to remove soil and other earth impurities. The washed peppercorns are then fed to a bucket elevator which takes it to a direct steam blanching machine.

The blanching of the pepper berries occurs when they pass through the direct steam blanches at 110 degree C for a period of 12 – 17 minutes. The blanching process deactivates the enzymes in the peppercorns which cause the darkening of the berries. By the blanching process the enzymes are deactivated and the green chlorophyll color is retained. The blanched peppercorns are then sudden cooled and left to cool for another 2 hours in SS tanks with water. A small amount of Vitamin C (Ascorbic Acid) is added which acts as a preservative and as an oxidation agent. Water is then drained and the peppercorns are spread on SS trays and subjected to controlled hot air drying in an electrically heated dryer.

The controlled drying lasts for about 8 – 10 hours when the temperature reaches around 90 – 98 degree C. At the end of the drying process the moisture content of the peppercorns is reduced to below 5 %. This is determined by the moisture analysis of the peppercorns. The dried green peppercorns are then taken out of the dryer and subjected to various cleaning processes including sieving, spiraling and metal detection. Spiraling helps to remove the still present impurities like stems, stalks, leaves etc. by gravity separation. Ferrous and non ferrous metals are removed by magnets and metal detector. The cleaned peppercorns are then fed into the color sorting machine to remove black and other discolored  berries which constitute up to 5 % to attain a uniform green color. The finished goods are then packed in heat sealed poly bags of 10 kg each within 7 ply corrugated paper cartons. The cartons are palatalized and will be ready for shipment.
